- 1/2 STICK VERY SOFT MARGARINE
- 2 EGG YOLKS
- 1/2 CUP OF COLD CLUB SODA
- 2 TEASPOONS OF VINEGAR

Step 1
SIFT FLOUR AND BAKING POWDER IN BOWL. CUT IN THE COLD MARGARINE TO A COURSE
TEXTURE - ABOUT THE SIZE OF SMALL PEAS - IF CUT T0 FINE, THE PASTRY WILL NOT FLAKE WELL.
WITH A FORK , BEAT THE EGG YOLKS ,CLUB SODA AND VINEGAR TOGETHER:ADD TO FLOUR
MIXTURE.
MIX QUICKLY AND WELL WITH HANDS - OR A FORK - TO FORM A BALL OF DOUGH.
DOUGH WILL BE SLIGHTLY STICKY, BUT IGNORE THIS UNLESS IT IS VERY STICKY.
IF IT IS, WORK IN A BIT MORE FLOUR. WRAP DOUGH IN PLASTIC AND REFRIGERATE FOR 2-1/2 TO 3 HOURS, HEAT A SHARP KNIFE, AND CUT THE DOUGH INTO 2 EQUAL PARTS.
ROLL EACH PART ON A FLOURED SURFACE TO ABOUT A 16 INCH SQUARE-NOT MUCH THINNER -
PUT THE 1/2 STICK OF MARGARINE IN MICROWAVE FOR A FEW SECONDS TILL IT IS MELTED.
THEN BRUSH IT ALL OVER THE INCH PIECE OF DOUGH.
MAKE A FRENCK FOLD - FOLD BOTH
SIDES TO THE CENTER - THEN BRUSH ON MORE MARGARINE .
NOW FOLD THE DOUGH IN HALF
IT WILL MAKE A NARROW STRIP - BRUSH THIS WITH THE MELTED MARGARINE AGAIN
THEN FOLD THE TOP OVER THE BOTTOM .
REPEAT WITH THE OTHER BALL OF DOUGH
WRAP EACH SECTION IN PLASTIC AND REFRIGERATE OVERNIGHT.
WHEN READY TO MAKE THE TURNOVERS, ROLL ONE PART OF THE DOUGH INTO A 14 INCH
SQUARE.
WITH A HOT KNIFE, CUT INTO SQUARES FOR WHATEVER SIZE TURNOVERS YOU
WANT.
PUT THE FILLING IN, - DO NOT USE TOO MUCH JUICE - FOLD INTO TRIANGLES
AND USE A FORK TO SEAL THE EDGES.
ALSO WITH THE FORK PIERCE THE TOPS TO LET THE STEAM ESCAPE.
PREHEAT THE OVEN TO 375 DEGREES.
PLACE TURNOVERS ON A UNGREASED COOKIE SHEET AND BAKE FOR ABOUT 18 - TO 25 MINUTES OR UNTIL GOLDEN BROWN.
USE A DROP OF WATER AND POWDERED SUGAR FOR THE GLAZE
