Ingredients

  • 3/4 pound lean ground beef
  • 1 medium onion, chopped
  • 2 tbsp. olive oil
  • 1/4 cup red wine
  • 2 (24 oz.) jars marinara sauce
  • 1/2 tsp. dried crushed red pepper
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 (8 oz.) package sliced mushrooms
  • 1 medium red onion, chopped
  • 12 lasagna noodles, cooked
  • 1 (10 oz.) package frozen chopped spinach, thawed and drained well
  • 8 oz. cheddar cheese, shredded
  • 1 (15 oz.) carton ricotta cheese

Preparation

Step 1

1. Preheat oven to 350 degrees.
2. Cook beef and onion in 1 tbsp. olive oil in a large skillet over medium heat, stirring until beef crumbles; drain. Add wine; simmer, stirring occasionally, 3 minutes. Stir in 3 1/2 cups marinara sauce and red pepper; simmer, stirring often, 15 minutes.
3. Cook mushrooms and red onion in 1 tbsp. oil in a large skillet over medium heat, 10 minutes. Stir in 1/2 tsp. salt and 1/4 tsp. pepper.
4. Spread 1/4 cup meat mixture in a lightly greased 11 x 7 inch baking dish. Layer with 3 noodles, 1/2 of remaining meat mixture and 1/2 of cheddar cheese.
5. Layer 3 noodles, mushroom mixture and 1/2 of ricotta cheese.
6. Layer 3 noodles, spinach, 1/2 tsp salt, 1/4 tsp. pepper and remaining ricotta cheese.
7. Top with remaining noodles, meat mixture and cheddar cheese.
8. Bake, covered, 45 minutes. Uncover; bake 15 minutes. Let stand 15 minutes before serving.
