Traditional Rice Pudding (Arroz con Leche)

Ingredients
- 1 cup long-grain basmati or other white rice
- 3 cups water
- 1/8 tsp salt
- 4 cups milk
- 1 egg, beaten (optional)
- 1 tbsp thin strips lime peel
- 1/2 cup raisins
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
- 1 tbsp brandy (optional)

Step 1
Place the rice in a large saucepan with the water, lime peel, and salt. Bring to a boil, cover and lower the heat. Simmer until most of the water is absorbed. Be careful not to burn it. Add the milk and other ingredients. (If you decide to add the egg, whip it into the milk before adding to the rice). Cook until the mixture thickens and for two minutes more. Let cool 20 minutes and transfer to serving bowls.
