Raspberry-Merlot Dressing

Ingredients

• 5 tbsp olive oil
• 1/3 cup merlot or other fruity red wine
• 1/2 pint fresh or frozen dry-packed raspberries
• 1 sliced shallot
• 2 tbsp low-fat sour cream
• 2 tbsp red wine vinegar
• 2 tsp honey
• 1/4 tsp salt
• 1/4 tsp ground black pepper
