Ingredients

  • 1 quart fresh lettuce or wild edible greens
  • 1/2 cucumber, peeled, seeded and cut into thin strips
  • 1 hard-boiled egg
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon lemon juice
  • 1/2 cup heavy whipping cream, whipped

Step 1

Rinse the lettuce (or greens) well, and wrap them in paper towels to dry. Place the wrapped leaves in plastic bags and chill to crisp.

Before serving, tear the leaves into bite-sized pieces and place them in a serving bowl. Add the cucumber strips.

In a small bowl, mash the egg yolk with the mustard, salt and sugar. Add the lemon juice. Fold in the whipped cream. finely chop the egg white and add it to the dressing. Just before serving, pour the dressing over the salad.
