Ingredients

  • Teriyaki:
  • Fish Sauce & Black Pepper
  • 1/2 c. fish sauce
  • 1/2 c. sugar
  • 2 whole fresh hot red chilies (like Thai)
  • 2 Tbsp. minced garlic
  • Fresh ground pepper (lots)
  • 1/2 c. soy
  • 1/2 c. mirin (or 1/4 c. honey mixed with 1/4 c. water)
  • 1 Tbsp. minced garlic
  • 1 Tbsp. minced ginger
  • Miso:
  • 1/2 c. miso
  • 2 Tbsp. honey
  • 1 Tbsp. rice vinegar
  • Fresh ground pepper
  • Barbecue:
  • 1/2 ketchup
  • 2 Tbsp. water
  • 1 Tbsp. wine or rice vinegar
  • 1 tsp. soy sauce
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 2 Tbsp. finely chopped onion
  • 1 tsp. minced garlic
  • Curry Yogurt:
  • 1/2 c. yogurt
  • 2 Tbsp. olive oil
  • 2 Tbsp. lime juice
  • 1 Tbsp. curry powder
  • 1 tsp. cumin
  • Salt & pepper
  • Chipotle-Lime
  • 1/3 c. olive oil
  • 3 Tsbp. chopped chipotles in adobo (including some of the sauce)
  • 1 Tbsp. minced garlic
  • Salt & pepper
  • Thai Peanut:
  • 1/3 c. coconut milk
  • 1/4 c. peanut butter
  • 1 Tbsp. soy sauce
  • 1 Tbsp. fish sauce
  • 2 Tbsp. lime juice
  • Jerk:
  • 4 roughly chopped scallions
  • 1 peeled shallot
  • 1/2 habanero or Scotch bonnet chili
  • 1/2 " peeled fresh ginger
  • 2 garlic cloves
  • 1 Tbsp. fresh thyme leaves
  • 1 Tbsp. allspice berried
  • 1 Tbsp. honey
  • 2 Tbsp. lime juice
  • 1/4 c. vegetable oil
  • Salt & pepper
  • Buffalo:
  • 1/3 c. relatively mild hot sauce
  • 4 Tbsp. melted butter
  • 1 Tbsp. sherry or wine vinegar
  • 1 Tbsp. minced garlic
  • Salt & pepper
  • Garam Masala
  • 4 Tbsp. melted butter
  • 1 Tbsp. garam masala
  • 1 Tbsp. minced ginger
  • 1 tsp. minced garlic
  • salt

Preparation

Step 1

Fish Sauce & Black Pepper
Combine all ingredients and whisk to incorporate the sugar. While you are grilling the wings, put sauce in med. saucepan over medium heat. Cook until it thickens into a thin syrup (essentially a fish-sauce caramel) and use to baste wings at the very last minute before you take them off the grill.

Teriyaki:
Combine soy sauce and mirin in a small saucepan over med. heat. When it boils, turn off the heat and stir in garlic and ginger. Cool sauce before tossing with wings.

Miso:
Whisk all ingredients, adding splash of hot water to thin it out, until smooth.

Barbecue:
Mix all ingredients until combined.

Curry Yogurt
Mix all ingredients until combined.

Chipotle-Lime
Mix all ingredients until combined.

Thai Peanut
Mix all ingredients until combined and whisk until smooth.

Jerk:
Combine all ingredients and blend or process into a paste.

Buffalo:
Mix all ingredients until combined.

Garam Masala:
Mix all ingredients until combined. Should be the texture of a thick paste.
