Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 4 eggs, beaten
  • 3 tbsp brandy
  • 2 cups flour
  • Pinch cinnamon
  • 1 1/2 cups currants, optional
  • 1 1/2 cups raisins, optional
  • 1 1/2 cups sultanas, optional
  • 1 whole almond
  • 3 tbsp honey
  • 1/4 cup candied cherries, optional

Preparation

Step 1

Grease a 9-by-12-inch cake tin. Cream the butter and sugar together and stir in the well-beaten eggs and brandy. Sift the flour with a little cinnamon and fold into the butter mixture. Stir in the dried fruits and the almond.

Pour batter into cake tin and bake for three hours at 300 F. Allow to cool for 30 minutes before turning out. Melt the honey and glaze the top of the cake and decorate with candied cherries.
