Raspberry Vinaigrette

This recipe was given to me by the mother (Judy) of the couple that owned the Lakeview Resort on Lake Pend O'Reille. We'd sometimes boat over there on a summer afternoon and have lunch and swim off the dock.

Ingredients
- Herbs de Provence:
- 1/2 cup Dijon mustard
- 1/2 cup raspberry or tarragon vinegar
- 2 tbsp dried herbs de Provence
- 1 tbsp pepper
- 1 cup safflower oil
- 24 raspberries
- Tarragon
- Chervil
- Thyme

Step 1
Whisk first four ingredients. Gradually add oils while whisking. Add raspberries. Serve over green salad.
