Ingredients
- 1 medium onion, chopped
- 1 carrot, chopped
- 1 green pepper, chopped
- Handful of mushrooms, chopped
- 2 garlic cloves, minced
- 6 ounces tofu, chopped
- 4 tbsp oil
- 1 large (1 pound, 12 ounces) can tomatoes
- 1/2 (3 ounce) can tomato paste
- 1/2 cup red wine or water
- 1 tbsp parsley
- 1 tbsp basil
- 1 tbsp oregano
- 2 bay leaves
- Salt, to taste

Step 1
Brown the onion, carrot, green pepper, mushrooms, garlic and tofu in the oil for about 3 minutes. Add all of the other ingredients, bring to a boil; then simmer at least 1 hour, loosely covered. Serve over spaghetti.
