Ingredients

  • 1 medium onion, chopped
  • 1 carrot, chopped
  • 1 green pepper, chopped
  • Handful of mushrooms, chopped
  • 2 garlic cloves, minced
  • 6 ounces tofu, chopped
  • 4 tbsp oil
  • 1 large (1 pound, 12 ounces) can tomatoes
  • 1/2 (3 ounce) can tomato paste
  • 1/2 cup red wine or water
  • 1 tbsp parsley
  • 1 tbsp basil
  • 1 tbsp oregano
  • 2 bay leaves
  • Salt, to taste

Preparation

Step 1

Brown the onion, carrot, green pepper, mushrooms, garlic and tofu in the oil for about 3 minutes. Add all of the other ingredients, bring to a boil; then simmer at least 1 hour, loosely covered. Serve over spaghetti.
