Marinated Goat Cheese

This came from "Vegetarian Sandwiches" by Paulette Mitchell. I use it in conjunction with another recipe from this same book, Pear Crostini.

Ingredients
- One 4- to 6-ounce log fresh white goat cheese
- 1/4 C extra-virgin olive oil
- 2 cloves garlic, minced
- 1 tsp fresh rosemary
- 1 tsp minced fresh basil
- 1/2 tsp freshly ground pepper
- salt to taste

Preparation
Step 1
1. Cut the cheese log into 1-inch pieces; drop into an 8-ounce glass jar with a tight-fitting lid.
2. Stir the olive oil and all the remaining ingredients together in a measuring cup; pour over the cheese. Add more oil if necessary to cover the top of the cheese. Cap the jar and shake to distribute the oil and herbs.
3. Refrigerate for at least 2 hours before serving. To serve, spoon out the cheese as needed, draining off the excess oil.
