Ingredients

  • 1 (29 ounce) can sliced peaches, undrained
  • 4 tbsp packed brown sugar, divided
  • 3 tbsp cornstarch
  • 2 tbsp butter or margarine
  • 1/2 tsp ground ginger
  • Dash of salt
  • 1 cup buttermilk baking mix
  • 1/3 cup milk
  • Whipped cream or topping

Step 1

In 10-inch skillet over low heat stir peaches, 3 tbsp sugar, the cornstarch, butter, ginger and salt until thickened and bubbly; keep hot.

In bowl, mix until blended baking mix, remaing 1 tbsp sugar and the milk. Drop by tablespoonfuls onto hot peach mixture. Cook uncovered over low heat 10 minutes. Cover and cook 10 to 15 minutes or until dumplings are fluffy. To serve, spoon some peaches and syrup over dumplings. Top with whipped cream.

To cook in microwave: Cook peach mixture uncovered 7 minutes or until thickened, stirring occasionally. Spoon on dumpling batter, cover with waxed paper and cook 5 minutes or until dumplings are fluffy and peach mixture is hot.
