Rolled Cookies

Requires chilling - 2 hours or overnight.
Variation: Sparkling Cookies - Cut dough into shapes; use a large spatula to lift onto baking sheets. Bake as directed, and cool completely. Frost with desired Royal Icing (recipe in collection), let dry slightly, and sprinkle with white sparkling sugar.
Variation: "X" Cookies - Shape small pieces of dough into 1/2-inch thick ropes, cut ropes into 3-inch lengths, and place on cookie sheet. Make a 1-inch cut through ends of each rope, spread apart to form "X's." Bake as directed, and cool completely. Microwave 1 cup of white chocolate chips in a 2-cup glass measuring cup until melted, stirring every 30 seconds. Dip both ends of "X" into melted white chocolate, letting excess drip off; let dry slightly on waxed paper, sprinkle with silver dragees. Note: Dragees (tiny round, hard candies used for decorating) may present a choking risk for small children; stick with sparkling sugars for kids.
Variation: Sugar-Dusted Round Cookies - Cut dough with a 3-inch round cookie cutter; bake as directed, and cool completely. Place a small amount of confectioners' sugar in a small wire mesh sieve. Place star or stripe stencils over cookies and dust lightly with sugar.
Variation: Silver-Studded Stars - Cut dough with 3-inch 5-point star cutter and 1 1/2-inch 8-point star cutter; bake as directed, and cool completely. Frost with white Royal Icing; let dry slightly and sprinkle with silver dragees.

- 3/4 cup sugar
- 1 egg plus 1 egg white
- 2 tsp vanilla

Step 1
Mix together flour and bkaing powder; set aside. Beat butter at medium speed with an electric mixer until fluffy, 1 minute; add sugar and beat 2 minutes. Add egg, egg white, and vanilla and beat to combine. Add flour mixture and beat to combine. Divide dough in half, wrap, and chill 2 hours or overnight.
Roll to 1/8-inch thick on a lightly floured surface and cut into desired shapes. Bake at 350 F on cookie sheets 1 inch apart until edges are golden, 10 to 12 minutes. Decorate as directed.
