Ingredients

  • 12 oz. jar picante or salsa
  • 1.5 lbs. boneless, skinless chicken breast
  • 1 tsp. garlic powder
  • 4 Tbs. olive oil, divided
  • 1/3 c. flour
  • 1 &3/4 c. chicken broth
  • 1/2 c. 2% milk
  • 1/4 tsp cayenne pepper
  • 10-15 corn tortillas
  • 3 c. shredded cheddar or Mexican blend

Step 1

Preheat oven to 375 degrees. Place sauce in blender & puree' until smooth. Cut chicken into 1-inch cubes. Heat 2 Tbs. oil in pan & saute' chicken & garlic until chicken is done. Remove from pan, add remaining oil & flour & stir continuously to make a smooth paste. Add broth a bit @ a time & stir until thickened. Reduce heat to low & add milk, cayenne & puree' & cook until heated through. Layer in a 9 x 13-sauce, tortillas & chicken. Repeat & top with cheese. Bake for 30-35 min.
