Ingredients

  • Glaze:
  • 4 or 5 medium-large sweet potatoes
  • 1 cube margarine
  • 3 eggs, separated
  • 1 cup brown sugar
  • 1 tsp salt
  • 2 cups brown sugar
  • 1 cube margarine
  • 1/2 cup water

Preparation

Step 1

Peel and boil sweet potatoes until soft. Drain off water and add margarine. Mix with electric mixer and add 3 egg yolks, brown sugar, salt and milk; set aside.

In a separate bowl beat 3 egg whites until stiff; fold into potato mixture.

Put in greased bundt pan and bake at 350 F for 45 minutes. Remove from oven and let stand for 5 to 10 minutes. Turn pan onto a serving dish.

For glaze, melt ingredients together in a saucepan. When dissolved, pour over ring and serve hot.
