Kristy's Ancient Chinese Noodle Cookies

These cookies are great because you don't have to bake them. I use raisins in this recipe, but you could use cranberries on any type of dried fruit, or none at all if you prefer. You could also use melted chocolate to drizzle on top to finish off these cookies.

  • 12 ounces semisweet chocolate chips, melted
  • 12 ounces butterscotch chips, melted
  • 1 (16-ounce) can Chinese noodles
  • 1 (16-ounce) can unsalted dry roasted peanuts
  • 1 cup raisins
  • Sprinkles, for decorating

Preparation

Step 1

Melt chocolate and butterscotch separately in a double boiler over barely simmering water, or in the microwave at 50 percent power.

In a medium bowl, combine the melted chocolate and butterscotch, and set aside. In another medium bowl, combine Chinese noodles, peanuts and raisins. Mix in the melted chocolate mixture. Drop the batter by heaping tablespoons onto waxed paper and refrigerate until set, about 20 minutes. Decorate cookies with sprinkles.
