- 4 to 6 large sweet potatoes, peeled or unpeeled as desired
- 2 tbsp canola oil
- 1 tsp toasted sesame oil
- Kosher salt

Step 1
Preheat oven to 400 F. Cut sweet potatoes in half lengthwise, then into wedges about 1/8-inch thick. (Alternatively, slice potatoes into rounds). In a bowl, mix together canola and sesame oils. Add potato wedges and toss until well-coated. Spread on baking sheets (you may need 2 or 3). Bake until slightly golden and crispy on the outside, and soft on the inside, about 20 minutes. Sprinkle with salt. Serve hot.
