Ingredients

  • 6 c raisin bran cereal - or just use bran flakes and add fruit later
  • 2 c boiling water
  • 1 c melted shortening - use canola oil or can use 1/2 c oil and 1/2 c applesauce
  • 3 c sugar - can be cut to 2 to 2 1/2 c
  • 4 eggs beaten - or 1 c egg substitute
  • 1 quart buttermilk - can make using lowfat milk and vinegar
  • 5 c plain flour - can use 2 c whole wheat and 3 c plain
  • 5 t soda
  • 2 t salt
  • I add 1 t cinnamon

Preparation

Step 1

Place 2 c bran cereal in large bowl. Pour in boiling water and let stand while assembling other ingredients.

Mix in shortening. Mix remainder of cereal with sugar, eggs, and buttermilk.

Sift flour, soda, salt, and cinnamon. Combine all ingredients.

Cook in well greased muffin tins at 400 degrees until done - about 20 minutes.

Batter will keep in refrigerator for six weeks if tightly covered.

I have added blueberries after measuring out about 3 cups for 12 muffins.
