Ingredients

  • 2 TBSP + 1 tsp active dry yeast
  • 1 TBSP sugar
  • 1 TBS honey
  • 3 cup warm water (110 degrees F/45 degrees C)
  • 6 tablespoons olive oil
  • 1 TBSP salt
  • 1 TBSP pizza spice (or Italian seasoning)
  • 7 cups bread flour

Preheat oven to 450

1 - In KitchenAid or comparable blender with dough hook place 6 1/2 cups of flour
2 - in a medium bowl, dissolve yeast, honey and sugar in warm water. Let stand approx 10 mins.
3 - When yeast water is frothy add in salt, oil, pizza spice
4 - Gradually stir yeast water in bread flour until dough is soft but no longer sticky (if the dough gets too wet use the remaining 1/2 cup of flour to create correct consistency). Let stand for 5 to 30 mins.
5 - Lightly cover hands and a clean surface area with flour. Roll out dough to unifrom thickness and cut into thirds.
6 - form into dough balls and refridgerate or freeze.
7 - if using immediately allow dough ball to sit for another 30 minutes to make it eaiser to form OR skip the dough ball step completely and simply cut into thirds and form into desired shape for pizza.

Bake 20-30 minutes. (Depends on oven and personal taste.)
