Ingredients
- 4 tbsp oil
- 1/2 pkg firm tofu, cubed
- 2 1/4 tbsp green curry paste
- 2 cans coconut milk
- 2 cups cooked cubed chicken (thighs)
- 1 zucchini, sliced
- 1 butternut squash, boiled and cubed
- 3 tbsp fish sauce
- 4 sprigs basil
- 2 1/2 tbsp half&half
- cooked rice to serve

Step 1
In lg pan heat 3 tbsp oil over med heat, add tofu and fry until golden, set aside. In same pan add remaining oil and curry paste over med heat, stir in coconut milk & boil. Add tofu, veggies, meat, fish sauce and sugar, simmer 5 min. When ready to serve add basil and 1/2 & 1/2. Serve over rice...
