Ingredients

  • Non-Fat Curry Dressing:
  • 6 ounces fresh spinach (about 6 cups), torn into bite-sized pieces
  • 1 cup thickly sliced strawberries
  • 1 cup blueberries
  • 1 small red onion, thinly sliced, pulled into rings
  • 1/2 cup chopped pecans
  • 2 tbsp balsamic vinegar
  • 2 tbsp rice vinegar
  • 1 tbsp plus 1 tsp honey
  • 1 tsp curry powder
  • 2 tsp Dijon mustard
  • Salt, to taste
  • Pepper, to taste

Preparation

Step 1

Wash and dry spinach. Whip together dressing. Add to spinach and toss lightly. Add berries, onions and pecans. Toss lightly.
