Ingredients
- 3/4 cup (9 ounce jar) hot mango chutney
- 1/4 cup olive oil
- 3 tbsp white wine vinegar
- 1/8 tsp dry mustard
- 1/8 tsp salt
- 8 cups (about 2 small bunches) fresh spinach leaves, washed, dried and coarsely chopped
- 2 red apples, unpeeled, cored, halved and thinly sliced
- 2 tbsp (1 large) thinly sliced green onion
- 1/4 cup (1 ounce) crumbled goat cheese
- 1/4 cup chopped pecans, toasted

Step 1
Place chutney, olive oil, vinegar, mustard and salt in blender; cover. Blend until smooth.
Combine spinach, apples and green onion in large bowl. Add dressing; toss well to coat. Sprinkle with goat cheese and pecans. Serve immediately.
