Candy's Harvest Slaw

Ingredients
- 3 tbsp. olive oil
- 2 garlic cloves, coarsely chopped
- 2 tbsp. caraway seeds, lightly crushed
- 1/4 c. cider vinegar
- 1 tbsp. honey
- Salt and ground black pepper
- 4 cups finely shredded red cabbage (or mixture of red and green)
- 1 red apple, cored and thinly sliced
- 1/2 c. dried cranberries
- 1/2 c. toasted pecan halves
- 2 tbsp. cilantro or parsley

Preparation
Step 1
In a large skillet, heat olive oil over medium heat. Add garlic and caraway seeds and cook 1 minute. Whisk in the vinegar and honey and simmer to combine. Season with salt and pepper.
In a large bowl toss together the cabbage, apples, cranberries and pecans. Add dressing and toss to combine. Top with cilantro or parsley.
*I cooked several slices of bacon. Removed, added the garlic, vinegar and honey and a tsp. or two of sugar and maybe a bit of olive oil. Just until it tasted good. I didn’t add the caraway seeds. I didn’t add the cilantro or parsley either but would add parsley if I had it.
