Whole Wheat Orecchiette with Broccoli Rabe & Chili Pepper
The pleasant bitterness of broccoli rabe is paired up with spicy chilis and savory garlic in this pasta dish, where our hearty Whole Wheat Orecchiette serves to capture ingredients and enhance flavor.
1 (1-pound) package DeLallo Whole Wheat Orecchiette
Directions:
Bring a large pot of water to a boil.
In the meantime, prepare the broccoli rabe greens by washing them thoroughly and trimming off any hard stems. Tear the leaves into pieces, careful to keep broccoli flowers in tact. Once boiling, add salt, about 2 tablespoons, and broccoli rabe. Blanch greens by cooking in boiling water for about 2 minutes. Remove greens with a slotted utensil and immediately place in a bowl of ice water to stop the cooking process and to preserve their bright green color. Drain, and set aside.
Add orecchiette to boiling water and cook for about 8 minutes, or until al dente.
Meanwhile, in a large saucepan on medium heat, sauté olive oil, garlic and chili pepper for about 2 minutes to infuse oil. Add brocolli rabe, and cook for about 8 minutes until completely tender. Salt to taste.
Drain pasta, saving 1 cup of pasta water for finishing sauce. Toss orecchiette and 1/2 cup of reserved pasta water in saucepan, toss to combine and cook on high heat for 2 more minutes.
