Ingredients

  • 6-8 slices French/Italian Bread
  • 3 T. softened butter
  • 2 C. shredded medium cheddar cheese
  • 2 C. shredded Monterrey Jack cheese
  • 2 (4.5 ounce)cans chopped green chilies
  • 6 large eggs
  • 2 cups milk (not skim)
  • 1 1/2 tsp. Tony Chachere's Creole Seasoning
  • 1 1/2 tsp paprika
  • 1 tsp dried leaf oregano
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/4 cup chopped yellow onion
  • 1/4 tsp dry mustard
  • 1 cup chopped ham
  • 1 fresh jalapeno pepper

Preparation

Step 1

Slice bread 1/2 inch thick and trim off crusts. Spread softened butter on one side of bread. Arrange bread, buttered side down in 9x13 pan. Sprinkle cheeses evenly over bread. Distribute chilies over bread. Add ham on top of chilies.

In a bowl whisk the eggs together with the milk and add all seasonings, onion and dry mustard. Pour egg mixture over top. Cover and chill at least 4 hours or overnight. Sprinkle finely chopped fresh jalapeno before baking. Bake covered at 325 degrees for 30 minutes. Uncover and bake a remaining 20 to 25 minutes or until the top is lightly browned. Let stand 10 minutes before serving.
