Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 2 (8-ounce) cans tomato sauce
- 1 (14-ounce) can chicken broth
- 1/4 teaspoon garlic salt
- 8 ounces medium egg noodles
- 12 ounces Monterey Jack cheese, grated
- 1/2 cup sour cream
- 1 1/2 cups shredded Cheddar cheese
- Chopped fresh parsley, optional for garnish

Step 1
Cook ground beef, onion and bell pepper in a large skillet over medium-high heat until ground beef is browned and crumbly, about 8 minutes; drain.
Add tomato sauce, broth and garlic salt to ground beef mixture and mix well. Bring mixture to a boil.
Stir in noodles; reduce heat to low; cover. Cook, stirring occasionally, until noodles are tender, about 10 to 15 minutes.
Add Monterey Jack and sour cream to ground beef mixture and mix well. Cook, stirring frequently, until thickened, about 5 minutes.
Sprinkle servings with Cheddar. Garnish with parsley, if desired.
