Ingredients
- 4 cups broccoli florets
- 1/2 cup balsamic vinegar
- 1/2 cup olive oil
- Salt, to taste
- Pepper, to taste

Step 1
Bring a large pot of water to a rolling boil. Add the broccoli and blanch for 2 to 3 minutes. Broccoli will turn bright green. Don't overcook! Broccoli should be crisp, not mushy.
Drain the broccoli and stop the cooking by rinsing with cold water. If you want the broccoli really cold, dump it into ice water after rinsing and draining.
Using a wire whisk or a fork, beat the oil and vinegar together vigorously until they are mixed and somewhat thickened.
Pour over the broccoli and toss to coat the florets. Add salt and pepper to taste. Bon appetit!
