Ingredients

  • DRESSING:
  • 4 cus (2L) of chopped vegetables (carrots, broccoli florets, frozen peasm green beans) or use a bag of frozen Asian-style vegetables which are usually exactly 4 cups
  • 2 green onions, sliced
  • 1/4 cup chopped fresh cilantro
  • Optional: 1/44 cup sliced or slivered almonds
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1-1/2 tbsp sesame oil
  • 1 tbsp chili paste

Preparation

Step 1

1. Bring 3 quarts of water to a boil. Add 1 tsp salt. Add quinoa and cook for about 7-8 minutes

2. Add the vegetables and cook a further 5 - 6 minutes or until the quinoa a vegetables are just tender.

3. Drain. Rinse with cold water and drain again. Let completely cool. ( you can also refrigerate at this point)

4. Make the dressing by combining the soy sauce, vinegar, sesame oil and chili paste.

5. Add the dressing to the salad and stir to combine.

6. Add the green onions, cilantro and almonds. Toss gently and serve.
