Ingredients

  • 1 quart small, new leaves of butter lettuce
  • 1 small bunch baby radishes, thinly sliced
  • 2-inch length of cucumber, slice paper-thin
  • 1 sweet onion, thinly sliced
  • 1/4 pound crumbled Danish blue cheese
  • pinch of salt
  • pinch of pepper
  • pinch or dry mustard
  • pinch of sugar
  • 2 tablespoons white vinegar
  • 4 tablespoons vegetable oil

Preparation

Step 1

Wash and dry the lettuce and form the leaves into a bowl. Add the radishes, cucumber and onion. Sprinkle with the blue cheese.

In a small bowl, mix together the salt, pepper, mustard, sugar and vinegar. Whisk in the vegetable oil.

Just before serving, stir the dressing and pour over the lettuce bowls.
