Ingredients

  • 6 eggs
  • 1 t vanilla extract
  • 1/2 c pure maple syrup
  • 1/4 c coconut milk
  • 1/2 c coconut flour, sifted
  • 1 t salt
  • 1/2 t baking soda
  • zest of a half a lemon
  • 1/2 c palm shortening, melted
  • 2 c fresh blueberries

Preparation

Step 1

preheat oven to 350.

Blend first 4 ingredients w a hand mixer until smooth.
Combine dry ingredients plus lemon zest. Add melted palm shortening and continue to blend. Fold the fresh blueberries into batter and scoop 1/4 c batter into ea muffin cup. Bake for 35 min.
