Ingredients

  • 6 boneless chicken breasts
  • 1/4 c flour
  • 1 Tbsp olive oil
  • 1 lb baby potatoes
  • 1 tsp oregano
  • 1/2 tsp minced garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3 Tbsp lemon juice
  • 1/2 c chicken broth
  • 1/4 c white wine

Step 1

Coat chicken with flour; shake off any excess. Heat olive oil in a large skillet over medium-high heat. Add chicken and sauté until lightly browned on both sides.

Add potatoes and sprinkle with oregano, minced garlic, salt and pepper. Add lemon juice, chicken broth and white wine.

Cover and reduce heat to low. Simmer until chicken is cooked through (160º); about 30 minutes.

Remove cover and cook an additional 15 minutes until sauce is slightly thickened.

(I thought it needed more sauce!)
