Ingredients

  • 1 lb. button mushrooms, trimmed and halved
  • 3 TBSP plus 2 tsp olive oil
  • salt and pepper
  • 3 slices of bread
  • 1/3 cup chopped fresh parsley
  • 4 tsp dijon mustard
  • 4 bone-in pork chops
  • 2 bunches arugula, trimmed and chopped
  • 2 TBSP lemon juice plus wedges for serving

Preparation

Step 1

Preheat oven to 475. On a rimmed baking sheet toss mushrooms with 2 TBSP oil.
Season with salt and pepper and roast for 35 minutes.

Meanwhile in food processor, pulse bread until course crumbs form. Toss crumbs with1 TBSP oil and parsley.
Spread mustard on ones side of each pork chop. Press into crumbs, transfer to rimmed baking sheet, crumb side up.

Bake until pork is cooked through about 15-20 minutes. Toss together with mushrooms, arugula, 2 tsp oil, lemon juice and salt and pepper to taste.

Serve alongside pork with lemon wedges.
