Make Ahead Stuffed Mushrooms with Homemade Bread Crumbs

Stuffed mushrooms are a great way to use bread that has gone stale. Slice a baguette into cubes and toast in a 350F oven for 20 minutes. Pulse the cubes of bread in a food processor until you reach the consistency of bread crumbs.
You can add ingredients to the bread crumb mixture. Try cooked Italian sausage, pancetta, or bacon, drained frozen chopped spinach, or cheeses, like Gruyere or Parmesan. Remember that stuffed mushrooms prepared without any added meat products can satisfy any vegetarians on your guest list.

- 18-20 white button mushrooms
- 2 Tbsp extra virgin olive oil
- 4 Tbsp unsalted butter
- 1 shallot, minced
- 1 clove garlic, minced
- 3/4 cup dried bread crumbs
- 1 tsp salt

Step 1
Sauté some shallots and garlic with butter and extra virgin olive oil. Pour over the prepared bread crumbs and combine until moistened. Toss in a handful of chopped fresh herbs.
Spoon the bread crumb mixture into the hollow cavity of the mushroom. Don’t overstuff.
Fill a tray with the stuffed mushrooms and add a tablespoon of extra virgin olive oil to evenly coat the bottom of the tray. Cover with plastic wrap and refrigerate until ready to serve.
Preheat the oven to 400F and bake. After about 20 minutes in the oven, a thin crust will form over the top of the bread crumbs. Enjoy!
