Ingredients

  • 1 can cream of celery soup
  • 1/2 cup sour cream
  • 2 T butter
  • 1 med onion, chopped
  • 1 t chili powder
  • 2 cups chopped turkey
  • 1 can med chopped chiles
  • 8 8 inch tortillas
  • 1 cup shredded Monterrey jack cheese
  • 1 t cumin
  • 1 t chopped garlic

Preparation

Step 1

Stir soup and sour cream in a small bowl and set aside. Heat butter in a 3 qt saucepan. Add onion, chili powder, cumin and garlic and cook till onions are tender. Stir in turkey, chilies, and 2 T of soup mixture. Put 1/2 of remaining soup mixture in the bottom of a baking dish. Fill the center of the shells and put in dish. Pour soup mixture over top of enchiladas and then put the cheese on top. Cook at 350 until they are heated through.
