Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts (breast Halves, Not The Whole Breast)
  • 16 slices Thin Bacon
  • Cajun Spice
  • Salt And Pepper, to taste
  • 16 whole Small Dinner Rolls
  • 16 slices Cheese Of Your Choice (cheddar, Monterey Jack, Pepper Jack, American, Swiss)
  • Bottled Sauces Of Your Choice: BBQ, Louisiana Hot Sauce, Teriyaki, Etc.
  • Toppings Of Your Choice: Tomato Slices, Grilled Onions, Lettuce, Celery Leaves, Etc.
  • Spread Of Your Choice: Mayo, Mustards, Mayo Mixed With Chipotle Pepper, Etc.

Slice bacon pieces in half and fry over medium-low heat until

Place the palm of your hand flat on the top of each chicken breast. Apply light pressure as you slice it horizontally in half (be careful!) When you're finished, you'll have eight thinner chicken breast pieces. Slice each of these in half so you'll wind up with sixteen small chicken "patties." Place a piece of plastic wrap on top of the thicker pieces and pound gently with a rolling pin to flatten slightly.

Heat a grill pan if you have one, or a heavy skillet over medium to medium-high heat. Cook chicken pieces on the first side for a couple of minutes, then flip them over to the other side. Lay slices of cheese (whatever kind you'd like) on top of each piece, then top with a couple of bacon slices. Cook until chicken is done, then remove from the pan.

Spread both sides of dinner rolls with the spread of your choice (mayo, mustard, etc.) and the toppings of your choice (tomato, lettuce, etc.) Place chicken pieces in between halved dinner rolls. Serve immediately!

Variations:

* Brush a little Louisiana hot sauce on the chicken. Add bacon, then top with a bunch of celery leaves before putting inside the buns.

I make these at home, but I use small ciabatta rolls for my bread. Gives them a little more resistance, especially when baked in the oven for a few minutes to get them on the toasty side. Plus I just love ciabatta bread.

Love the show Sat., had to make the onion strings that night to go with grilled bbq burgers total hit everyone loved them, but I’d advice not to have people around while frying as they tend to disappear almost as soon as I laid them on the sheet

Okay, Ree, along with the comments on the nude shoes–I just have to make this observation: I have observed it on myself and others. The dark, trendy nail colors just aren’t flattering on over 40 hands. The more natural soft colors make my hands look younger and better overall. Just sayin….

The things you use are things I use and if I don’t use them I can get them at the store. I am going to make these for my son’s hockey team party on Saturday night – the heck with the Super Bowl. Hi Michelle, Kraft Singles or Velveeta Singles, I think even Borden makes a cheese single. American cheese is processed cheese that in this case is sliced. Hope that helps you.

This is fantastic and something I will make for my family. I have been complaining lately that after 16 years of cooking meals for my family, I can’t think of anything to make for dinner. I’m stuck in a rut. I looked up dinner ideas on the web which brought me to a certain site. The meals these people cooked for dinner were so outrageously extravagant. I thought “really……, this is just a regular night meal? Oh that’s right…. I always have some sweet breads in my freezer”. I think my kids would enjoy these sliders over brains any day!!!!!

Here’s how I was my cast iron skillet, which I’ve had for years. If it can’t be cleaned with a simple wiping, I wash in with a sponge and hot water – no soap. Then place the damp, clean pan back on a burner, turn on the burner until all of the water has evaporated. Then I pour a tiny bit of neutral oil (e.g., canola, vegetable) on a paper towel and rub it on the inside of the pan – bottom and sides. It’s good to go for next time I need it.
