Ingredients
- pkg. (18.25 oz.) white cake mix, like Duncan Hines
- 1 cup margarita mix
- 1 navel orange, zested and juiced
- 3 egg whites
- 2 Tbs. vegetable oil
- 2 Tbs. tequila (optional)
- 1 pkg. (16 oz.) classic white frosting
- 2 tsp. lime juice
- Sparkling sugar, like Wilton

It’s almost Cinco de Mayo! Celebrate with these sweet-and-tangy margarita cupcakes, which you can make ahead if you're heading to a party this weekend. Skip the tequila for a kid-friendly version.
1 pkg. (18.25 oz.) white cake mix, like Duncan Hines
1 cup margarita mix
1. Heat oven to 350ºF. Line two 12-well cupcake pans with paper liners. In bowl of electric mixer on low speed, beat cake mix, margarita mix, 1/3 cup orange juice, 1 tsp. orange zest, egg whites, vegetable oil and tequila (if using) 30 sec. or until blended.
2. Increase speed to medium. Beat 2 min. more or until light and airy. Divide batter evenly among prepared cupcake pans. Bake 22 min., or until toothpick inserted in center of cakes comes out clean. Let cool completely.
3. In clean bowl, using electric mixer on medium speed, beat frosting and lime juice 15 sec. or until blended. Spoon frosting into pastry bag fitted with star tip. Pipe frosting onto cupcakes. Sprinkle sparkling sugar evenly over cupcakes. Garnish with lime slices and green straws, if desired.
