- 2 (3-pound) split chickens
- 1 tablespoon vegetable oil
- 1/4 teaspoon salt
- 1 tablespoon butter, softened
- 1/3 cup maple syrup
- 2 tablespoons bourbon or chicken broth
- 3/4 teaspoon crushed black peppercorns

Step 1
Preheat oven to 425F. Rub chicken with vegetable oil. Sprinkle with salt. Spread butter over chicken.
Roast chicken for 30 minutes. Meanwhile, combine maple syrup, bourbon and peppercorns in a small bowl.
Brush maple syrup mixture over chicken. Roast until chicken is cooked through, about 15 minutes longer.
Drain pan juices into a small saucepan. Serve alongside with chicken if desired.
