Spicy brittled peanuts- Smitten Kitchen
- 1/2 t flaky sea salt
- 1/2 t baking soda
- 1/8 t cayenne pepper
- 1 c sugar
- 1 T unsalted butter
- 1/4 cup water
- 2 cups peanuts
Combine salt, baking soda and cayenne pepper
In a heavy saucepan heat sugar, butter and water about 7-10 minutes until the mixture just begins to turn golden.
Add peanuts. stir continuously. In a few minutes They will seize and then in about 3 minutes they will return to golden caramel
Continue to stir until fully coated breaking up clumps.
Remove from heat, add the seasonings and pour out onto greased parchment or silicone sheet
