Cream of Tomato Soup

Ingredients
- 2 tablespoons unsalted butter
- 1 small onion – minced
- 2 pounds tomatoes – peeled
- salt/pepper
- 1 tablespoon fresh basil – roughly chopped
- 2 small potatoes – cubed
- 1 bouillon cube
- 1/2 cup heavy cream.

Preparation
Step 1
1. In a sauce p an add butter: Heat over medium heat until melted. Add onions. Saute until softened. Add tomatoes, season with salt and pepper. Cook for approximately 10-15 minutes.
2. Add potatoes, bouillon and 3 cups of water. Bring to a boil, lower heat to simmer and cook for 25-30 minutes until potatoes are fork tender.
3. Transfer mixture to blender. Secure lid. If using Blendtec, press SOUPS button. If using a different blender, pulse until mixture is silky and smooth.
4. Return blended mixture to pan. Add cream. Check for seasoning. Add salt/pepper if necessary. Stir to combine.
