Ingredients
- 1 tbsp olive oil
- 1 large onion, chopped
- 6 cloves garlic, chopped
- 1 pound dried red beans, rinsed and soaked overnight
- 8 cups water
- 6 plum tomatoes, peeled, seeded and diced
- 1 (6 ounce) package baked, pressed tofu (smoke flavor), diced
- Salt, to taste
- Pepper, to taste

Preparation
Step 1
In a large soup pot, heat the oil and cook the onion and garlic over medium heat until they are soft.
Drain the beans. Turn up the heat, add the beans and the water, and bring to a boil. Lower the heat, add the tomatoes, and simmer the beans for 2 to 3 hours or until they are tender. During cooking, add more water to the pan if it seems dry.
Add the tofu, salt, and pepper and heat thoroughly. Serve at once.
