Ingredients

  • 2 lbs cauliflower crowns, broken into the same size pieces.
  • 5 tablespoons of olive oil
  • salt and pepper to taste
  • 6 to 10 roasted cloves of garlic
  • 1 teaspoon crushed red pepper
  • 2 tablespoons nonpareil capers undrained
  • 10 peppadew peppers and 3 tablespoons brine
  • 1/2 cup chopped italian flat leaf parsley
  • 3 ounces of toasted pine nuts

Preparation

Step 1

Preheat oven to 450 degrees on convection roast cycle

Toss cauliflower in salt, pepper and three tablespoons of olive oil Arrange in a single layer on large baking sheet. Roast on center rack of oven 15 to 25 minutes (just until slightly charred)

Heat olive oil in medium skillet add pine nuts. Toast until lightly browned. Watch carefully. Remove from heat.

Heat olive oil in braising pan on medium. Add roasted garlic and cook for one minute. Add crushed red peppers, capers, and peppers. Cook, stirring, for one minute. Stir in parsley and cauliflower.

Cook, stirring for one minute. season to taste with salt and pepper. Garnish with toasted pine nuts and peppadew brine.
