Ingredients

  • 1 (6 1/2 oz.) can chopped clams
  • 3/4 cup Pillsbury BEST® All Purpose Flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper, or to taste (optional)
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons minced onion
  • 1 large egg, lightly beaten
  • Crisco® All-Vegetable Shortening, for deep frying
  • Lemon wedges
  • Tartar sauce

Step 1

1. DRAIN clams, reserving 1/4 cup juice.

2.COMBINE flour, baking powder, salt, cayenne pepper and black pepper in medium bowl. Stir in clams and minced onion. Combine clam juice and egg in small bowl. Add to flour mixture; stir until well blended.

3.HEAT shortening to 365ºF in a deep saucepan or deep fryer. Drop level tablespoons of clam mixture into hot shortening. (Do not use fryer basket.) Fry several fritters at a time for 3 1/2 minutes or until browned. Drain on paper towels.

4.SERVE with lemon wedges and tartar sauce.
