Ingredients
- Crisco® Pure Vegetable Oil, for frying
- 1/2 pound fresh crab meat
- 1 cup biscuit mix
- 3/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 teaspoon Old Bay seasoning
- 1 tablespoon chopped fresh parsley
- 1/4 cup milk
- 1 large egg, lightly beaten
- 2 tablespoons fresh lemon juice
- CREOLE SAUCE
- 1/2 cup Creole mustard
- 1/2 cup mayonnaise
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon hot sauce
- 1/4 teaspoon freshly ground black pepper

Preparation
Step 1
1. POUR oil to a depth of 2-inches in a Dutch oven. Heat to 375ºF.
2. DRAIN and flake crabmeat, removing any bits of shell. Stir together biscuit mix, salt, garlic powder, seasoning and fresh parsley. Make a well in the center of mixture. Stir together milk, egg and lemon juice in small bowl. Add to dry ingredients, stirring until just moistened. Stir in crabmeat.
3. DROP batter by teaspoonfuls into hot oil. Fry a few at a time, 30 seconds or until golden, turning once. Combine Creole Sauce ingredients. Serve immediately with Crab Fritters.
