Step 1
Slice 2 large onions thin and cook in 1 tbsp olive oil in a skillet over medium heat until golden, 20 minutes; stir in 1/4 tsp salt and 1/8 tsp pepper. Slice 3 medium red potatoes 1/8-inch thick and cook in boiling water 3 minutes; drain. Toss potatoes with 1 tbsp olive oil, 2 tsp chopped fresh rosemary, 1/2 tsp salt and 1/4 tsp pepper. Unroll a 10-ounce refrigerated pizza crust on a baking sheet; brush with 1 tbsp olive oil. Bake at 425 F for 4 minutes; remove from oven, spread onions over pizza, and top with potatoes and 4 ounces crumbled goat cheese; bake 15 minutes more.
