Ingredients

  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups crisp rice cereal or cornflakes
  • 2 cups quick or old-fashioned oats
  • 1 1/4 cups (3 1/2 ounces) flaked coconut

Step 1

Using electric mixer, beat butter and sugars until light. Beat in vanilla and eggs, 1 at a time. Add combined flour, baking soda, baking powder and salt; mix well. Stir in cereal, oats and coconut. Drop by rounded measuring tablespoonfuls onto greased baking sheets, about 2 inches apart. Flatten to 2-inch circles. Bake at 350 F for 10 to 12 minutes or until light golden brown. Remove to wire racks; cool completely.

Variation: Stir 1 cup (any combination) of chopped nuts, chocolate or butterscotch pieces or raisins into dough.
