Cashew-Chocolate Berry Sandwiches

Ingredients
- 3 c raspberries, blueberries and blackberries
- 1-24 oz. loaf of brioche or other rich yeast bread
- 1 recipe for Chocolate-Cashew Spread
Preparation
Step 1
In a medium bowl smash berries with fork and set aside.
Trim off rounded top of loaf so it's flat. Slice horizontally into 3-1/2" slices. Spread berries on bottom slice. Top with middle slice and spread with 1-1/2 cups cashew chocolate spread. Top with remaining slice. Cover in plastic wrap and chill for one hour. Trim crust off sides and ends. Cut crosswise into 1" slices.
Chocolate-Cashew Spread
place 4-1/2 oz. (3/4 c) milk chocolate baking wafers (38% cacao) in a double boiler. Place over hot but not boiling water. Upper pan should not touch water. Stir constantly until melted. In food processor, process the melted chocolate, 1-1/3 c cashew butter, 6 T unsalted butter, 1/4 t salt and 1/4 t vanilla bean paste until smooth. Chill in airtight container up to one month. Makes 2 c.
