Carrot Ginger Soup

Ingredients
- 2 T oil
- 1 T butter
- 2 garlic cloves, minced
- 1 onion, chopped
- 3 T ginger root, grated
- zest of 1 lemon
- 1 T coriander
- 1 t cumin
- 1 t cinnamon
- 1 lb carrots, chopped
- 2 c stock
- 1/4 c oj
- 1/4 plain yogurt

Preparation
Step 1
1) In a large stock pot, saute the onion, garlic, ginger, and lemon zest along with the spices.
2) Add the carrots and 1 c water and cook over medium high heat for 15 min. Add water as needed.
3) Add the stock and simmer on low for 30 min
4) Puree the soup and pour back into the pot
5) add the oj and yogurt and cook for 3 more min
