Ingredients

  • 16 strudel leaves or filo sheets
  • 1/2 lb unsalted butter, melted
  • 2 lbs fresh spinach (wash, drain & chop)
  • 1 bunch fresh flat-leaf parsley ( 1 cup)
  • 3/4 lb feta cheese (crumbled)
  • 5 eggs-lightly beaten
  • 2/3 cup of olive oil
  • salt and pepper to taste
  • Optional: 2 tbsp cinnamon
  • Optional: few sprigs of fresh dill-chopped fine

Step 1

Line bottom of 10" X 15" X 2" pan with 8 filo sheets, brushing each sheet with melted butter prior to adding next sheet. Pat each sheet smooth.

Mix greens with olive oil, eggs, cheese, salt and pepper (and cinnamon, if desired).
Combine thoroughly and distribute evenly over filo sheets in pan.

Add 8 more filo sheets over filling; brushing each as you add it with melted butter. Tuck in ends. DO NOT BUTTER TOP FILO SHEET.

WITH A SHARP KNIFE, CUT THROUGH TOP SHEETS ONLY INTO 2 INCH SQUARES.

Bake AT 350° for 1 hour or until filo is golden and puffy. Cut through and serve hot.

NOTE: when working with filo, prepare only 1 sheet at a time, covering remaining sheets with a cloth that has been wrung out in cold water. This will keep the remaining sheets moist and pliable.
