  • whole lemons, cut into quarters
  • additional lemons, juiced
  • coarse sea salt

Step 1

* Wash and quarter lemons.

* Place a couple of tablespoons of salt in the bottom of each mason jar.

* Start adding lemons, squishing down as you go and adding a tablespoon or so of salt to each layer.

* Top up with additional freshly squeezed lemon juice, leaving some headspace and screw on lids. Make sure you wipe any juice/salt of the rims of the jars first.

* Set aside at room temperature, turning upside down each day or every other day, for about a month, then store until ready to use.

* Refrigerate after opening.
