Ingredients

  • 3 (4 ounce) cans roasted whole green chilies
  • 2 eggs
  • 1/4 cup flour
  • 1/4 tsp chili powder
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup Monterey Jack cheese, shredded
  • 1 package Hidden Valley Original Ranch salad dressing and seasoning mix

Preparation

Step 1

In a small bowl, mix eggs, flour, and the chili powder together. Let set a little while, and mix again until smooth. Set aside.

Mix together cheeses and salad dressing mix.

Cut one side of chilies down the middle, open lengthwise, and remove seeds.

Place 1 1/2 to 2 tablespoons cheese mixture in each chili and fold together sides.

Dip stuffed chilies in egg mixture. Deep fry at 350 F until lightly browned, about 2 minutes; or heat 1/4 inch of oil in a large frying pan until hot, about 300 F, and fry until golden brown, about 1 minute each side.

Serve hot, with a side of salsa, if desired.
